Hearty Fig Harvest Spice Oatmeal

Each serving contains approximately 375 calories, 8 grams fat, 10 grams fiber, 14 grams protein, and 48 grams carbohydrates.
 

1 cup almond milk

1/2-inch-piece ginger, peeled and diced

1 dried Turkish fig, chopped

¼ cup chopped apple and pear

½ cup almond or soy yogurt

1 Tbsp. chia seeds

2 Tbsp. protein powder

¼ tsp. vanilla

½ cup dried oatmeal (not instant)

¼ tsp. cinnamon

¼ tsp. sea salt (optional)

  • Place the almond milk, ginger, figs, and fruit in a saucepan and bring to a boil over medium-high heat.
  • Meanwhile, place the yogurt, chia seeds, protein powder, and vanilla in a serving bowl and whisk it all together.
  • When the almond milk comes to a boil, add the oatmeal, reduce the heat to low, and cook for about 5 minutes, until the liquid is mostly absorbed.
  • Reserve a little of the yogurt mixture to use as a topping, then spoon the cooked oatmeal into the bowl. Top with the yogurt and enjoy.
